  My dad had a butchers years ago and as a child I used to be picking over pigs heads for some tasty bits for the sausages.... but that was the days before what is called something like 'mechanicaly recovered' muck..
  
  I used to pick at the raw sausage meat too, to eat (safely!), something you could not dream of doing now.
