Watched River Cottage tonight, he was trying to demonstrate to some students how EASY fish is to cook.
Just wrap fillets in foil with lemon juice and herbs, and it can be ready to eat in about 15 minutes. Very healthy too. (Mackerel, whiting, etc)
Having been born in Grimsby (!) I was brought up on a variety of fish.
Father and most Grimsby people would NEVER eat cod - preferring better quality fish like haddock, hake, halibut, etc.
I love skate, it's difficult to better it, served with brown butter sauce.
